Weekend Recipe Blogging: Spicy Italian Sausage Beer Chili


This one is off the chain, my man.








You'll need:
-some kind of fat (I used butter)
-2 onions, diced
-green bell pepper, diced
-red bell pepper, diced
-some hot peppers, like jalapenos or whatever, diced
-a bunch of garlic cloves, diced
-about 1 lb. of ground meat
-.5 lb-1 lb. of Italian sausage
-optional: some chunks of steak or stew meat
-a small can tomato paste
-1 big can of crushed or diced tomatoes
-1 can or bottle of darker beer (I used Dos Equis Amber)
-some chicken stock, not that much
-spices: I used salt, black pepper, crushed red pepper, cayenne, cinnamon, nutmeg, coriander, oregano, a bunch of chili powder, & hot sauce; you could also put some salsa directly in there
-toppings: diced regular onions, diced green onions, shredded cheese, salsa, sour cream/yogurt, more hot sauce, whatever you like


1. heat up whatever fat you use in a big ol' pot, then toss in the onions
2. cook those for a while, then throw in your peppers
3. cook those for a while, then throw in the garlic
4. you can add some salt and pepper in as you go here
5. kinda put the pot halfway on your burner, then scoot all the veggies to the side of the pot that's off the heat
6. throw your meat in on the hot side and cook that up
7. go ahead and throw in all your spices
8. once meat is cooked, put the pot all the way back on the burner and add tomato paste and tomatoes
9. add in chicken stock and beer--this is where you can adjust the thickness of the chili
10. simmer for two hours

I'm not into beans in chili, but you could add those, of course. I might also up the bell pepper content next time I make it.
