Weekend Recipe Blogging: Italian Crockpot Chicken
Probably the easiest dinner that I make here, delicious and filling. You'll need:
-about 1 lb. chicken (I usually use thighs here because they're cheaper, but breasts will be great too. Boneless is optional, but you should probably get it with the skin on for crockpot cooking.)
-1 big can of tomatoes
-1/2 jar of green olives
-1 can of artichoke hearts, drained
-spices: basil, oregano, parsley, salt, black pepper, red pepper flakes, garlic or garlic salt/powder
Dump the first 4 ingredients in your crockpot and turn on low for about 6 or 7 hours. Come in at some point and stir in your spices. I recommend serving this with quinoa and kind of stirring it all together. Mmmmm...
